Blackberry Crumble Bars
1 C. sugar or substitute 3/4 honey
1 tsp. baking powder
3 C. flour (Central Milling)
1/4 tsp. Realsalt
Zest of one lemon
Mix together. Cut in: 1 C. cold butter (Epicurean Chefs) and 1 egg (Clifford Farms)
Pat half of this dough into a buttered 9X13 pan.
Mix: 4 C. blackberries or blueberries (Weeks Berries of Paradise), 1/2 C. sugar or honey, 4 tsp. cornstarch, and juice of one lemon. Spread over the crust in pan. Crumble remaining dough over berries. Bake 45-60 minutes till brown on top.
