2 medium zucchini (or the equivelant of one that's grown to be the size of a human femur)
1/2 C flour (Central Milling is locally grown - can be found at Whole Foods; 365 brand)
3 chopped green onions
Salt + Pepper (real salt; leave out pepper if Hardcore)
2 eggs (check your favorite Farmers Market, or ask a friend that has chickens)
Shred the zucchini in a food processor. Place in a colander and sprinkle with salt. Let sit 10 minutes, then squeeze out the liquid.
Place in a bowl. Add the rest of the ingredients. Mix well and form into patties. Fry in hot local butter or lard until crispy. Serve with grated Beehive Aggiano cheese.
