Summer Veggie Salad

Ingredients:

1 lb. beans (whatever your local CSA is serving- fava, green, etc)

1/4 c. olive oil

3 ears of corn (white is my favorite)

salt and pepper

1 T vinegar of your choice (Slide Ridge Honey Vinegar works great, but Sherry vinegar will work if you need)

6 c. arugula

8 oz cherry tomatoes, halved

1/2 c choppped mint

1/2 c chopped basil

8 oz burrata (Caputo's makes it fresh!)

 

Directions:

Blanche beans for 2-3 minutes and chill in an ice bath

Cook corn either on grill (approx. 2-3 minutes a side) or in a skillet with 2 T of oil.

In a bowl, whisk 2 T of oil and the vinegar.

Add arugula, tomatoes, mint, basil, corn and beans to mistor and season with salt & pepper.

Toss to coat and spoon burrata on top.
